Storage effects of gel encapsulation on stability of chokeberry monomeric anthocyanins, procyanidins, color density, and percent polymeric color
Chokeberries (Aronia melanocarpa) are an antioxidant-rich plant product due to their high content of polyphenols, especially anthocyanins and procyanidins. These polyphenols have been shown to provide protection against coronary heart disease, stroke, and lung cancer, as well as against oxidative stress, the main cause behind chronic diseases promoted by free radicals. The objective of this study was to determine the storage effects of gelatin encapsulation on monomeric anthocyanins, procyanidins, color density, and percent polymeric color of three gummy candies of different strengths formulated with a base of 25.4% chokeberry concentrate, 47.6% sucrose, 1.3% Splenda, and 0.025% potassium sorbate. The gum strengths varied by percentages of gelatin and water in the formulations, with 19.1:6.6, 17.8:7.9, and 16.5:9.2 ratios used to produce soft, medium, and hard strength gummies, respectively. Total monomeric anthocyanins, total procyanidins, color density, and percent polymeric color of the gummies were determined 1 day post-processing and after 2, 4, and 6 months of storage at refrigerated and room temperatures. Storage for 6 months at room temperature resulted in dramatic losses of monomeric anthocyanins (80-82%), total procyanidins (48-54%), and color density (76-80%). Anthocyanin losses during storage coincided with marked increases in percent polymeric color values indicating that anthocyanins and procyanidins underwent condensation reactions to form polymers. Refrigerated storage ameliorated losses of monomeric anthocyanins (61-65%), total procyanidins (17-22%), and color density (60-67%) over 6 months of storage compared to samples stored at ambient temperature. Refrigerated storage also ameliorated the increase in polymeric color values observed in samples stored at room temperature indicating condensation reactions responsible for polymer formation were retarded. Processing and storage effects on the polyphenolic content and antioxidant capacity of conventional and sugar-free blueberry jams
Fresh blueberries have received much attention due to their positive role in human health and disease prevention. The abundance of polyphenolics, namely anthocyanins and procyanidins, is thought to play an important role in health promotion. Due to seasonal availability and limited shelf-life, blueberries are commonly preserved and consumed in various thermally processed forms (jams, juices, canned whole fruit, and purées). Both conventional high sugar and sugar-free blueberry jams are available on the market, but no information is available on how different formulations, processing conditions, and storage of processed jams affect the retention of polyphenolics and antioxidant capacity found in fresh berries. In this study, fresh blueberries were processed into conventional and sugar-free jams, and stored for 6 months at 4°C and 25°C. Jams were analyzed 1 d after processing and after 2, 4, and 6 months of storage for anthocyanins and procyanidins by HPLC, percent polymeric color, and oxygen radical absorbing capacity (ORAC). Anthocyanins in conventional jams were more susceptible to degradation and polymerization during storage than anthocyanins in sugar-free jams, which may be associated with elevated sugar content. Higher levels of polymers in conventional jams resulted in higher ORAC values, indicating that the polymers formed during storage possess potent antioxidant capacity. However, more research is needed to characterize the anthocyanin polymers and assess their bioavailability. Anthocyanin pigments were much more stable in sugar-free jams indicating that the low calorie jams are a healthy alternative to conventional jams. Anthocyanins, procyanidins, and ORAC were better retained in jams stored at 4°C than at 25°C indicating blueberry jams should be stored under refrigeration in order to maximize retention of health-promoting antioxidants
The contribution of fatigue and sleepiness to depression in patients attending the sleep laboratory for evaluation of obstructive sleep apnea
Purpose: A high prevalence of depressive symptomatology
has been reported amongst sufferers of obstructive sleep
apnea (OSA), but it remains unclear as to whether this is
due to their OSA or other factors associated with the
disorder. The current study aimed to assess the incidence
and aetiology of depression in a community sample of
individuals presenting to the sleep laboratory for diagnostic
assessment of OSA.
Methods: Forty-five consecutive individuals who presented to
the sleep laboratory were recruited; of those, 34 were
diagnosed with OSA, and 11 were primary snorers with no
clinical or laboratory features of OSA. Nineteen control
subjects were also recruited. Patients and controls completed
the Beck Depression Inventory, the Profile of Mood States
(POMS), and the Epworth Sleepiness Scale to assess their
mood and sleepiness, prior to their polysomnography.
Results: All patients reported significantly more depressive
symptoms compared with healthy controls, regardless of their degree of OSA. There were no significant differences
between OSA patients and primary snorers on any of the
mood and self-rated sleepiness measures. Depression scores
were not significantly associated with any of the nocturnal
variables. Regression analysis revealed that the POMS
fatigue subscale explained the majority of the variance in
subjects' depression scores.
Conclusions: Fatigue was the primary predictor of the level
of depressive symptoms in patients who attended the sleep
laboratory, regardless of the level of severity of sleep disordered breathing. When considering treatment options,
practitioners should be aware of the concomitant occurrence
of depressive symptoms and fatigue in patients presenting with sleep complaints, which may not be due
to a sleep disorder

Leaky Pipes, Leaky Wallet: A Look At OSU's Steam/Water Condensate Return System
Course Code: ENR/AEDE 4567One of The Ohio State University’s (OSU) goal is to reduce 5% potable water consumption per capita every five years and reset the baseline every five years thereafter.To achieve a 5% reduction in water consumption, H2 Block O’s research focuses on improving the efficiency of the steam condensate return system at McCracken Power Plant; a boiler plant that generates steam for 131 buildings on The Ohio State University’s campus. The motivation for this undertaking is to increase OSU’s water use rating with AASHE STARS, which is a tracking, assessment, and rating system used to measure sustainability among universities. The research objectives of this project include comparing McCracken’s current state to an efficient system, calculating a payback period analysis in order to weigh the decision-making process, and finally, the third objective is to make recommendations the university can embark on in the future to continue down a path of increased reduction in potable water consumption.Academic Major: Environment, Economy, Development, and Sustainabilit
Transformative education: Pathways to identity, independence and hope
In 2008–2010, the Australian Government’s social inclusion agenda and the Bradley Review of Higher Education profiled the importance of education for people from disadvantaged backgrounds. This education needs to be transformative in both its nature and its outcomes. The Clemente Australia program is presented here as a means of providing such transformative education for people who are disadvantaged or socially isolated. This case study of Clemente Australia shows how the program is built upon a psychology of hope and provides pathways not only to new hope but also to a new sense of identity and independence.
Clemente Australia (CA) is an example of community embedded, socially supported university education (CESS). Essential elements of CA are respecting people for who they are and for where they are within their individual life journeys; building student capacity to be more proactive in reflecting upon and engaging with the world; learning with and relating to others; and promoting educative justice through the recognition of the students’ human rights to participate in tertiary education in a way that meets their personal and academic learning needs.
For the students, the university (Australian Catholic University) and other partners in CA, it is evident that there has been an ongoing shift from dependence upon the provision of materials and services to empowerment and enhanced capabilities in identifying the supports and processes required to meet the personal and professional needs of students, staff and community agencies. This shift has occurred through the scaffolding processes provided, the establishment of innovative partnerships and purposeful reflection. It has involved listening to one another, welcoming people into new worlds and challenging one another in the provision of transformative education to realise the fulfilment of hope for many Australians experiencing disadvantage.

Role of the Dental Community in HPV Vaccination Promotion
Introduction. With increasing awareness that human papillomavirus (HPV) can cause oropharyngeal cancer (OPC), dental providers may play an important role in promoting HPV vaccination and preventing cancer. Our goal was to assess knowledge and current HPV vaccine counseling practices among Vermont dentists and dental hygienists to identify potential targets for state-level interventions to increase vaccine coverage.
Methods. We developed a survey to assess knowledge, beliefs, practices and barriers regarding HPV vaccination, and distributed it via email to practicing Vermont dentists and dental hygienists. Free responses were analyzed using a coding framework generated from three key informant interviews.
Results. 90% of providers believe it is important for them to play an “active role” in their patients’ general medical care, yet only 50% believe it is their responsibility to recommend HPV vaccine. Only 50% feel knowledgeable enough to recommend the vaccine. 78.6% of providers rarely discuss HPV vaccination with their age-appropriate patients, and 82% rarely recommend the vaccine. When asked to name the biggest barrier against recommending vaccination, providers named the following factors most frequently: “not responsibility of dental provider” (27%); lack of confidence in knowledge (19%); time constraints (14%); and parent philosophical/religious opposition (11%).
Discussion. Because dentists and dental hygienists care for a broad pediatric population across the state, dental communities may be poised to play an expanded role in Vermont’s efforts to improve its HPV vaccination coverage. Deep learning cardiac motion analysis for human survival prediction
Motion analysis is used in computer vision to understand the behaviour of
moving objects in sequences of images. Optimising the interpretation of dynamic
biological systems requires accurate and precise motion tracking as well as
efficient representations of high-dimensional motion trajectories so that these
can be used for prediction tasks. Here we use image sequences of the heart,
acquired using cardiac magnetic resonance imaging, to create time-resolved
three-dimensional segmentations using a fully convolutional network trained on
anatomical shape priors. This dense motion model formed the input to a
supervised denoising autoencoder (4Dsurvival), which is a hybrid network
consisting of an autoencoder that learns a task-specific latent code
representation trained on observed outcome data, yielding a latent
representation optimised for survival prediction. To handle right-censored
survival outcomes, our network used a Cox partial likelihood loss function. In
a study of 302 patients the predictive accuracy (quantified by Harrell's
C-index) was significantly higher (p < .0001) for our model C=0.73 (95 CI:
0.68 - 0.78) than the human benchmark of C=0.59 (95 CI: 0.53 - 0.65). This
