Exploring the Technology of Gluten-Free Bread
The article presents the main properties and characteristics of amaranth, flax, rice, buckwheat flour, as well as the results of obtaining gluten-free bread based on combined flour. The physicochemical properties of the combined flour have been determined and the formulation of gluten-free bakery products has been developed. The technology of gluten-free bakery products based on combined flour has been improved. The general patterns of changes in the nutritional value of a new product have been studied. Feeding patients with gluten intolerance, improving the adequacy of treatment, improving the quality of life of the patient and his family. The article is devoted to the expansion of the range and development of bakery products. Studies have confirmed the absence of toxicity of amaranth for patients with celiac disease, as well as a review of the physico-chemical parameters of amaranth, buckwheat, flax and rice flour, percentages of the content of substances necessary for the human body. This summary information is used in further research to develop special gluten-free bakery products with combined flour. The general patterns of changes in the nutritional value of a new product have been studied. Baking work was carried out practically. As a result, it was found that sample No. 3 meets the requirements of gluten-free bread. The color of the samples was uniform, the surface color was brown, soft, porous, breadcrumbs were elastic, odorless, and the taste harmoniously fit into gluten-free bread. Bread meets the requirements of the current regulatory documents
Combustion of Hydrogen Sulfide-Containing Oil on the Surface of the Water and Possible Applications of Combustion Method at Sea
Oil production in sea conditions is associated with certain difficulties of the field development process due to technological peculiarities of oil production at sea. The Caspian Sea is an enclosed pond with a very sensitive ecosystem, therefore, maritime operations here meet higher requirements than in open ponds. The uniqueness of the Caspian Sea is in the fact that its biological wealth has no analogues in the world, therefore, mining without complying with strict ecological requirements can cause irreparable harm to the environment. This work deals with the analysis of the possibility to use controlled combustion in situ in case of accidents on the Kashagan oil field which is located in the Caspian Sea. The Kashagan oil field is distinguished by a high content of hydrogen sulphide. In order to study the operational possibilities of oil combustion in situ, the process of evaporation and combustion of desulfurized oil from the Kashagan field depending on salinity of water was studied in this work. The process of evaporation of hydrogen sulphide from hydrogen sulphide-containing oil and the peculiarities of its combustion on water surface were studied in this work. It has been stated that the main difference in oil combustion with a high content of hydrogen sulphide is that the oil combustion process leads to the increase of sulfur concentration in oil residue after combustion
trans-Bis(4,7-diphenyl-1,10-phenanthroline-κ2 N,N′)bis(nitrato-κ2 O,O′)zinc(II)
The title compound, [Zn(NO3)2(C24H16N2)2], is a twofold axially symmetric coordination compound. Given that the Zn—O interactions [2.4926 (15) and 2.6673 (15) Å] can be considered as weakly bonding and the nitrate ions share the same C
2 axis of the Zn(dpp)2 fragment (dpp is 4,7-diphenyl-1,10-phenanthroline), these anions belong to the coordination sphere of Zn2+, leading to a complex with an overall coordination number of 8 for the metal ion
