    PENYIMPANAN DAN PENGEMASAN BERAS DENGAN METODE VAKUM DI KABUPATEN TAKALAR

    Kabupaten Takalar merupakan salah satu daerah di Sulawesi Selatan dimana padi merupakan produk unggulan daerah. Iklim tropis dan lembab di daerah ini mendukung berkembangnya hama gudang (kutu beras) yang dapat menyebabkan beras menjadi berjamur, bau apek, dan saling melekat, sehingga secara ekonomi dapat berdampak pada penurunan harga. Pengemasan beras dengan metode vakum diharapkan dapat meminimalisasi kerusakan beras akibat serangan hama gudang selama penyimpanan, karena dengan metode vakum, jumlah oksigen di dalam kemasan akan ditekan, sehingga menghambat perkembangbiakan hama (larva hama). Kegiatan pengabdian ini ditujukan sebagai salah satu upaya meminimalisasi kehilangan akibat penanganan pascapanen yang tidak tepat, dengan jalan memberikan pengetahuan dan keterampilan kepada petani dan pedagang beras mengenai metode penyimpanan dan pengemasan beras yang dapat menjaga kualitas beras selama penyimpanan. Metode yang digunakan dalam kegiatan pengabdian ini adalah penyuluhan dan pelatihan. Kegiatan pengabdian telah dilakukan di Desa Tala, Kecamatan Pattalassang, Kabupaten Takalar, peserta terdiri dari anggota masyarakat petani dan pedagang beras sebanyak 30 orang. Pelatihan telah dilakukan dengan dua sesi kegiatan yaitu sesi ke-1 adalah penyampaian materi mengenai: (1) Pentingnya pengemasan beras dengan metode vakum selama penyimpanan, (2) Tata cara penyimpanan beras yang tepat agar bebas dari serangan hama gudang, (3) Tata cara penggunaan teknologi kemasan vakum pada beras. Dan sesi ke-2 adalah praktek menyosoh, menampi dan mengemas beras dengan metode vakum. Berdasarkan hasil monitoring oleh beberapa orang tim pelaksana, menunjukkan bahwa peserta telah mengetahui metode penyimpanan beras dengan benar agar bebas dari serangan hama gudang dan mengetahui teknik pengemasan beras dengan metode vakum. Kata kunci: penyimpanan beras, pengemasan vakum, Kabupaten Takala

    Legal Analysis Of Legal Protection Of Workers' Rights Based On Unilateral Termination Of Employment By PT Fast Food Indonesia (KFC Indonesia)

    This article discusses unilateral termination of employment (PHK) by employers is a practice that still often occurs in the world of employment in Indonesia and raises legal issues, especially related to the protection of workers' rights. This study analyzes legal protection for workers in the case of unilateral layoffs carried out by PT Fast Food Indonesia (KFC Indonesia), and assesses its legal implications for the mechanism for resolving industrial relations. The issues raised include the suitability of unilateral layoffs with the provisions of Law Number 6 of 2023 and the extent to which workers' rights are legally protected. This study uses a normative legal method with a statutory approach and a case approach. Data were obtained through literature studies and analysis of real cases of mass layoffs by KFC Indonesia. The results of the study indicate that unilateral layoffs by the company do not comply with legal procedures as stipulated in Article 151 of Law Number 6 of 2023, which requires notification, bipartite negotiations, and settlement of industrial relations disputes. In addition, workers' rights such as severance pay and job loss guarantees are not provided proportionally. The legal implications put workers in a disadvantaged position and pave the way for dispute resolution through legal mechanisms in the Industrial Relations Court. This study emphasizes the importance of enforcing strict and comprehensive legal protection for workers in facing unilateral layoffs.

    Traits of Mortadella from Meat of Different Commercial Categories of Indigenous Dairy Cattle

    The rising interest in healthier meat options prompted the exploration of alternatives to traditional pork-based products, incorporating meat from different livestock species, feeding regimens, and functional ingredients. This study investigates the production of healthier meat products by examining the physicochemical traits, fatty acid profile, and sensory properties of mortadella made with Cinisara meat of four young bulls and four adult cows, and four females of the Nebrodi Black Pig. All the animals were fed principally on natural resources. Nutritional analysis revealed different levels of moisture, protein, fat, and ash in raw materials, with pistachios contributing to a healthy fatty acid profile rich in monounsaturated and polyunsaturated fatty acids. Formulations using cow meat exhibited higher fat content and caloric value, resulting in sensory attributes such as more intense color, improved fat cube adhesion, and pronounced odors compared to young bull and control mortadella. Fatty acid analysis demonstrated distinctive profiles influenced by the meat type used and, as expected, bovine products showed higher contents of rumenic and other conjugated linoleic acids. Pork mortadella displayed greater ω6 and ω3 values, with a healthier ω6/ω3 ratio comparable to those found in cow products. Young bull mortadella showed the worse atherogenic and thrombogenic indices. The findings underscore the impact of raw materials on the nutritional and sensory attributes of mortadella, emphasizing the necessity for interventions to enhance fatty acid composition in processed meat products

    Pinjam meminjamkan barang merupakan suatu aktivitas yang merujuk pada meminjamkan barang tanpa imbalan, memiliki peran penting dalam interaksi sosial dan ekonomi masyarakat. Dalam hukum Islam, hal ini menjadi topik yang menarik untuk dianalisis karena relevansinya dengan prinsip-prinsip syariah seperti keadilan, keikhlasan, dan kemaslahatan bersama. Artikel ini bertujuan untuk mengkaji mengenai kegiatan pinjam meminjamkan barang dari perspektif hukum Islam, terutama dalam penerapannya dalam kehidupan sehari-hari dan pandangan fatwa ulama terkait. Pendekatan yang digunakan dalam analisis ini adalah studi literatur dengan mengacu pada sumber hukum Islam, termasuk Al-Qur’an, Hadis, dan pendapat para ulama. Kajian ini juga mempertimbangkan fatwa-fatwa dari lembaga keagamaan yang relevan. Hasil analisis menunjukkan bahwa kegiatan pinjam meminjamkan barang dianggap sah menurut hukum Islam jika memenuhi syarat-syarat tertentu, seperti kejelasan barang yang dipinjamkan, kesepakatan kedua belah pihak, dan komitmen untuk mengembalikan barang dalam kondisi yang sama. Dalam perspektif hukum Islam, pihak yang meminjamkan barang (mu’ir) tetap memiliki kepemilikan penuh atas barang tersebut. Dan kegiatan ini juga dilihat sebagai bentuk amal yang dianjurkan dalam Islam, dengan catatan tidak ada eksploitasi atau keuntungan yang diambil dari peminjaman tersebut. Fatwa ulama menyoroti pentingnya menjaga niat ikhlas. Dengan pemahaman yang mendalam mengenai prinsip-prinsip hukum Islam, kegiatan ini dapat menjadi sarana yang efektif untuk membangun solidaritas sosial dan mendukung kebutuhan masyarakat tanpa melanggar prinsip syariah. Selain itu, fatwa ulama memainkan peran penting dalam memastikan implementasi ini sesuai dengan nilai-nilai keadilan dan ke berkahan

    MANAJEMEN PENGOLAHAN DAN PENYIAPAN MP-ASI CEPAT SAJI DAN BERGIZI UNTUK IBU BEKERJA DI KABUPATEN TAKALAR (UPAYA MEMINIMALISASI PROPORSI BALITA GIZI KURANG)

    Kabupaten Takalar merupakan Kabupaten yang berada di provinsi Sulawesi Selatan, Indonesia. Kabupaten Takalar merupakan daerah dengan proporsi balita gizi kurang tertinggi sebesar 27,1% dibandingkan daerah lainnya berdasarkan hasil Riset Kesehatan Dasar tahun 2013. Masalah ekonomi dan kurangnya pengetahuan orangtua mengenai pentingnya gizi merupakan salah satu faktor tingginya proporsi balita gizi kurang di Kabupaten Takalar. Tujuan kegiatan ini adalah memberikan pengetahuan kepada orangtua mengenai manajemen penyiapan dan pengolahan makanan pendamping ASI (MP-ASI) cepat saji dan bergizi, sehingga walaupun ibu bekerja diluar rumah pemenuhan kebutuhan MP-ASI yang bergizi tetap terpenuhi. Program ini telah dilaksanakan selama satu hari dengan dua sesi kegiatan di Praktek Bidan, Kecamatan Pattalassang Kabupaten Takalar dengan mengundang 20 orang ibu-ibu yang memiliki balita. Kegiatan pelatihan meliputi: (1) Penyampaian materi dan diskusi. Peserta diberikan modul sebagai panduan kepada ibu-ibu yang memiliki balita dalam mengolah dan menyiapkan MP-ASI cepat saji dan bergizi; (2) Praktek manajemen penyimpanan dan pengolahan bahan makanan bergizi untuk dijadikan MP-ASI; (3) Praktek menyiapkan MP-ASI cepat saji dan bergizi.     Cladodes of Opuntia ficus-indica (L.) as source of bioactive compounds in dairy products

    Recently, the interest on improving livestock products' nutraceutical profiles by sustainable feeding systems has increased. In this context, the overall quality and, in particular, the nutraceutical profile of dairy products obtained by 16 lactating Cinisara cows fed integrated in dry season with Opuntia ficus-indica cladodes, were investigated. Two homogeneous groups of cows (milk yield: 6.3 ± 1.5 kg; body weight: 213 ± 55 kg) were in succession fed with 2 different diets (CON: pasture and wheat bran; OFI: pasture, wheat bran and cladodes), according to a 2 × 2 Latin square design. The bulk milk was used to make Caciotta cheeses, analyzed at 0, 15 and 30 storage days. Milk and cheeses samples were analyzed for chemical, physical and microbiological traits. On the final products, the nutraceutical and sensorial profiles, together with the antioxidant's capacity were also determined. On milk, only the urea content in individual samples was reduced in OFI. Considering the cheeses, the integration with cladodes did not influence the starter cultures development acted with 2 strains of S. thermophilus, but caused a higher content of polyphenols and a consequent greater antioxidant capacity, together with a change in the fatty acids profile. In particular, the caprylic, capric, lauric, myristic, and palmitic fatty acids were higher, as well as the petroselinic, vaccenic, rumenic, and α-linolenic fatty acids. Differently, the oleic and the γ-linolenic fatty acids were lower. The cheeses of OFI showed better overall acceptability, and a higher yellow color, odor intensities, and butter flavor. The multivariate analysis well distinguished the cheeses belonging to the 2 groups. Further investigations should be conducted to formulate well balanced diets including cladodes for Cinisara lactating cows, but also to determine the content of other important bioactive compounds in fresh and in treated cladodes, as well as their effects on animals' welfare and their productions

    The strategy to increase rice production to support national food security is realized through a rice field construction program. The rice field construction program aims to increase the area of rice fields through the expansion of rice fields. This study aims to: 1) Describe the farming profile before and after the rice field construction program in Botto Village, Pitu Riase District, Sidrap Regency, 2) Analyze changes in socio-economic aspects of participating farmers before and after the rice field construction program in Village Botto , Pitu Riase District, Sidrap Regency. The population of the study were all farmers who participated in the Rice Field Construction Program, which were 51 people using the entire population census method to become respondents. The analytical method used is quantitative descriptive analysis. The results of the study concluded that: 1) The rice field construction program in Botto Village, Pitu Riase Subdistrict, Sidrap Regency changed the farming profile in terms of non-productive land area and used, function and land use, cultivated species, ownership status and land tax. Utilization of human resources, equipment resources, financial resources and conditions of supporting facilities, 2) The rice field construction program provides socio-economic changes to the communities in Botto Village in the form of labor use, increased interaction among farmers, changes in livelihood status and increased income

    SGLT1 activity in lung alveolar cells of diabetic rats modulates airway surface liquid glucose concentration and bacterial proliferation

    High glucose concentration in the airway surface liquid (ASL) is an important feature of diabetes that predisposes to respiratory infections. We investigated the role of alveolar epithelial SGLT1 activity on ASL glucose concentration and bacterial proliferation. Non-diabetic and diabetic rats were intranasally treated with saline, isoproterenol (to increase SGLT1 activity) or phlorizin (to decrease SGLT1 activity); 2 hours later, glucose concentration and bacterial proliferation (methicillin-resistant Sthaphylococcus aureus, MRSA and Pseudomonas aeruginosa, P. aeruginosa) were analyzed in bronchoalveolar lavage (BAL); and alveolar SGLT1 was analyzed by immunohistochemistry. BAL glucose concentration and bacterial proliferation increased in diabetic animals: isoproterenol stimulated SGLT1 migration to luminal membrane, and reduced (50%) the BAL glucose concentration; whereas phlorizin increased the BAL glucose concentration (100%). These regulations were accompanied by parallel changes of in vitro MRSA and P. aeruginosa proliferation in BAL (r = 0.9651 and r = 0.9613, respectively, Pearson correlation). The same regulations were observed in in vivo P. aeruginosa proliferation. In summary, the results indicate a relationship among SGLT1 activity, ASL glucose concentration and pulmonary bacterial proliferation.     Inhibition of IL-34 Unveils Tissue-Selectivity and Is Sufficient to Reduce Microglial Proliferation in a Model of Chronic Neurodegeneration

    The proliferation and activation of microglia, the resident macrophages in the brain, is a hallmark of many neurodegenerative diseases such as Alzheimer’s disease (AD) and prion disease. Colony stimulating factor 1 receptor (CSF1R) is critically involved in regulating microglial proliferation, and CSF1R blocking strategies have been recently used to modulate microglia in neurodegenerative diseases. However, CSF1R is broadly expressed by many cell types and the impact of its inhibition on the innate immune system is still unclear. CSF1R can be activated by two independent ligands, CSF-1 and interleukin 34 (IL-34). Recently, it has been reported that microglia development and maintenance depend on IL-34 signaling. In this study, we evaluate the inhibition of IL-34 as a novel strategy to reduce microglial proliferation in the ME7 model of prion disease. Selective inhibition of IL-34 showed no effects on peripheral macrophage populations in healthy mice, avoiding the side effects observed after CSF1R inhibition on the systemic compartment. However, we observed a reduction in microglial proliferation after IL-34 inhibition in prion-diseased mice, indicating that microglia could be more specifically targeted by reducing IL-34. Overall, our results highlight the challenges of targeting the CSF1R/IL34 axis in the systemic and central compartments, important for framing any therapeutic effort to tackle microglia/macrophage numbers during brain disease
