    The purpose of this study was to determine consumer acceptance of smoked skipjack (Katsuwonus pelamis L) pre-treated in a solution of mangosteen peel with a concentration of 3%, 4% and 5%, in various soaking time 15 min or 30 min. The results showed that the pH and moisture content were relatively constant. Based on sensory evaluation, smoked fish pre-treated with 5% mangosteen peel and soaked for 30 min had higher value of taste, odor, and texture attribute

    Pengaruh Konsentrasi Asap Cair Dan Lama Perendaman Terhadap Mutu Organoleptik Ikan Kayu (Katsuo-bushi)

    Dried smoked skipjack or better known as Katsuo-bushi is a popular type of smoked fish in Japan. It has a distinctive flavor and widely used in traditional Japanese cuisine. The weakness of commercial Katsuo-bushi nowadays is the high content of Polycyclic Aromatic Hydrocarbon (PAH) (may exceed 10 ppb). Recent study examined the low PAH Katsuo-bushi product made with liquid smoke. However, the sensory acceptance of this product has not been determined yet. The purpose of this study was to determine the effect of liquid smoke concentration (1%, 2% and 3%) and soaking time (10, 20 and 30 min) on the sensory quality of Katsuo-bushi. Duo-trio method was used for sensory evaluation. Additional chemical analysis such as moisture content and pH were performed. Significant differences were found among liquid smoke Katsuo-bushi product compare to traditional Katsuo-bushi (P<0.1). Also, it is suggested that the longer the soaking time, the higher the moisture content and pH value. Keyword: Katsuo-bushi, liquid smoke, Duo trio method. Ikan kayu atau lebih dikenal dengan Katsuo-bushi adalah sejenis ikan asap yang telah lama dikenal dan memiliki flavor yang khas yang biasanya digunakan pada masakan tradisional di Jepang. Kelemahan ikan kayu yang ada di dunia dewasa ini adalah tingginya kandungan Polycyclic Aromatic Hydrocarbon (PAH) yang melebihi 10 ppb. Penelitian terkini (Berhimpon, dkk 2016) meneliti ikan kayu asap cair yang rendah PAH, tetapi belum diteliti tingkat kesukaan secara organoleptik. Penelitian ini adalah untuk mendapatkan ikan kayu asap cair yang rendah PAH tetapi disukai oleh konsumen. Tujuan penelitian ini ialah untuk mengetahui pengaruh konsentrasi asap cair dan lama perendaman terhadap mutu organoleptik ikan kayu asap cair yang dibuat dengan berbagai konsentrasi dan lama perendaman, dan dibandingkan dengan ikan kayu konvensional. Parameter pengamatan ialah analisa organoleptik dengan metode duo trio (Berhimpon, dkk. 2005), analisa kadar air dan pH (AOAC, 2005). Hasil penelitian ini menunjukkan bahwa ikan kayu yang direndam dalam asap cair dengan konsentrasi 2% dan 3% masing-masing selama 30 dan 10 menit berbeda sangat nyata (P<0,1) dengan ikan kayu konvensional. Sedangkan perlakuan yang lain sama dengan ikan kayu konvensional. Untuk analisa kadar air dan pH menunjukkan bahwa lama perendaman memberikan pengaruh yang nyata terhadap nilai kadar air dan pH dari ikan kayu asap cair, dimana semakin lama waktu perendaman dalam larutan asap cair maka semakin tinggi kadar air dan pH dari ikan kayu tersebut

    Sumoylation of Drosophila SU(VAR)3-7 is required for its heterochromatic function

    In Drosophila, SU(VAR)3-7 is an essential heterochromatin component. It is required for proper chromatin condensation, and changing its dose modifies position-effect variegation. Sumoylation is a post-translational modification shown to play a role in diverse biological processes. Here, we demonstrate that sumoylation is essential for proper heterochromatin function in Drosophila through modification of SU(VAR)3-7. Indeed, SU(VAR)3-7 is sumoylated at lysine K839; this modification is required for localization of SU(VAR)3-7 at pericentric heterochromatin, chromosome 4, and telomeres. In addition, sumoylation of SU(VAR)3-7 is a prerequisite for its ability to enhance position-effect variegation.     Penggunaan Kadar Protein Berbeda Pada Ayam Kampung Terhadap Penampilan Produksi Dan Kecernaan Protein

    The research was conducted to find the protein level that gives the best results on the production performances of native chickens (crossed of Bangkok and Kedu chicken) on feed consumption, water consumption, body weight gain, and FCR and protein digestibility. This research constisted two steps. Firstly, the study found the best production performances using 100 chicks (DOC) with average body weight of 36.98 ±5.50 g/chick without differentitating their sex. Secondly, using 60 months old cocks, the study invetigated the best treatment wich has a good protein digestibility. The study used a Completely Randomized Design (CRD) with five treatments namely P0=control feed (using factory feed), P1=20% of protein feed, P2=19% of protein feed, P3=18% of protein feed, and P4=17 % of protein feed. Each treatment had 5 replications. If there was found significant differences among the results, the statistical test was continued by test of Least Significant Difference (LSD). The results showed that the use of different protein levels in feed did not give significant differences (P&gt;0.05) on feed consumption, water consumption, body weight gain, and FCR. The treatment that used 19% of protein had the best value on weight gain. On the contrary, the results showed that decreasing levels of protein level on feed treatment had a highly significant effect (P&lt;0.01) on protein digestibility. The study suggests that 19% of protein can increase the weight of native chicken and has a good protein digestibility

    Gorgonians are important organisms living around coral reefs. They have high abundance and very important ecological role. They can be found in shalow to deep sea. Gorgonians belong to octoral taxon rarely studied either their taxonomy or other aspects. Some studies have informed that gorgonians can produce secondary metabolites as anti-bacteria. These belong to terpenoid, alkaloid, and steroid groups. The objective of this study was to obtain secondary metabolites of gorgonian, Paramuricea clavata, through several analytical steps, i.e. extraction, partition, chromatograpgy, and spectroscopy. Extraction was done through 5 phases of maceration and then continued with partition, chromatography, and spectroscopy. The secondary metabolites detected in ethyl acetate solvent, such as flavonoid, triterpenoid, steroid, and saponin, were the same as those in n-hexane solvent, while not all these compounds were detected in methanol solvent.Steroid was found in all gorgonian samples extracted in all solvent materials used in this study. Triterpenoid was also detected in gorgonian skin and axial extract using ethyl acetate, n-hexane, and methanol. Saponin was detected in all gorgonian extract, except the axial extract using ethyl acetate solvent

    Kandungan Fitokimia Dan Aktivitas Antioksidan Ekstrak Metanol Rumput Laut Kappaphycus Alvarezii

    The objective of the study was to determine the phytochemical content and antioxidant activity of Kappaphycus alvarezii seaweed extracted with methanol solvent. The extract was obtained by maceration of dried seaweed. Phytochemical tests were performed to determine the presence of alkaloids, flavonoids, saponins, triterpenoids and steroids. Kaphaphycis alvarezii seaweed antioxidant activity was tested by DPPH method (1-1-diphenyl-2-picrylhydrazyl). A phytichemical test revealed that there was not any alkaloids, flavonoids, saponins, steroids and triterpenoids content in methanol extract Kappaphycus alvarezi. The antioxidant activity by DPPH method showed the high IC50 value (163.82 ppm) It is indicated that the antioxidant activity of Kappaphycus alvarezii of dried seaweed extracted with methanol was very weak. The negative result from phytochemical test was speculated caused by the drying process of seaweed samples, the type of seaweed itself, and the insufficiency of desalting process. The unsaturated fatty acids was suspected to act as antioxidant in this type of seaweedTujuan penelitian adalah untuk mengetahui kandungan fitokimia dan aktivitas antioksidan rumput laut Kappaphycus alvarezii yang diekstraksi dengan pelarut metanol. Ekstrak diperoleh dengan cara maserasi terhadap rumput laut kering. Uji fitokimia dilakukan untuk mengetahui keberadaan senyawa alkaloid, flavonoid, saponin, triterpenoid dan steroid. Aktivitas antioksidan rumput laut Kaphaphycis alvarezii diuji dengan metode DPPH (1-1-difenil-2-pikrilhidrazil). Hasil penelitian memperlihatkan tidak terdeteksinya senyawa alkaloid, flavonoid, saponin, steroid dan triterpenoid pada ekstrak metanol Kappaphycus alvarezi. Uji aktivitas antioksidan dengan metode DPPH menunjukkan nilai IC50 sebesar 163.82 ppm. Hal ini menunjukkan bahwa aktivitas antioksidan rumput laut Kappaphycus alvarezii kering yang diekstraksi dengan metanol sangat lemah. Tidak terdeteksinya kandungan fitokimia diduga karena sampel rumput laut dikeringkan dengan sinar matahari langsung, jenis rumput laut ini tidak memiliki aktivitas antioksidan yang tinggi dan proses desalting yang tidak maksimal.     The dynamical Φ34\Phi_3^4 model by an approximation of Laplacian

    The dynamical Φ34\Phi^4_3 equation is a singular SPDE and has important applications in physics. In this paper, we consider the equation by approximating the Laplacian instead of the noise or the cubic term as in previous studies. By using a good transformation as in [JP21], we show that the approximating equation is locally well-posed and that its solution converges to the solution of the dynamical Φ34\Phi^4_3 equation. We expect to be able to show the global well-posedness and the existence of the invariant measure.Comment: 50 page
